Green Chile Chicken Recipe

This green chile chicken recipe has become one of my family’s most requested meals! I’m really not surprised, this baked chicken dish has so much incredible flavor with the creamy and flavorful sauce made with cream cheese, green chilies, enchilada sauce, seasonings and plenty of shredded cheese on top. It’s definitely one of those dinners that’s picky eater approved!

Everything comes together so easily too. From start to finish, this Tex-Mex recipe takes only about 15 minutes to prepare. After that, all you have to do is bake it for 30 to 35 minutes and you will have a tasty main! If you’re looking for comforting Mexican food, this is your recipe. For a complete Mexican dinner, pair it with homemade refried beans, Mexican rice, air fryer tortilla chips, and guacamole.

Ingredients Needed

Grab some simple ingredients, because it’s time to make a knockout dinner! This green chile chicken recipe is simple to make, super hearty, and packed with cheesy Tex-Mex flavor. See the recipe card below for exact measurements.

  • Chicken Breast: Boneless skinless chicken breasts work the best for this recipe.
  • Cream Cheese: Be sure the cream cheese is softened to room temperature so it mixes easily with the other sauce ingredients.
  • Seasonings: A mix of garlic powder, onion powder, cumin, salt and ground black pepper add delicious savory flavor.
  • Green Chiles: Canned diced green chiles come in mild, medium, or hot. Make sure to pick what level of heat you prefer!
  • Green Enchilada Sauce: Use this incredible homemade green enchilada sauce or use store-bought.
  • Shredded Cheese: Colby jack cheese is our favorite in this recipe because it gets perfectly melty. If you have the extra time, shred the cheese from a block for the best flavor and melting.

How to Make Green Chile Chicken

This green chile chicken is so simple to make! Simply, mix the green chile sauce and pour over the chicken. Bake it for about 30 minutes and dinner is done! It’s the perfect dish for a busy weeknight.

  1. Prep: Preheat the oven to 375 degrees Fahrenheit and spray a 4-quart baking dish with pan spray.
  2. Season the Chicken: Pat the chicken breasts dry with paper towels and lay them in the baking dish. Season lightly with salt and pepper.
  3. Make the Sauce: In a large bowl, beat the cream cheese, garlic powder, onion powder, cumin, salt, pepper, green chilies, and enchilada sauce until smooth.
  4. Assemble the Dish: Spread the cream cheese mixture over the chicken breasts and top with the shredded cheese.
  5. Cook: Bake for 30-35 minutes, until the center of the chicken reaches 365 degrees Fahrenheit on a thermometer and the cheese is melted and bubbly.
  6. Cool and Serve: Let the dish rest for 5-10 minutes before serving. Enjoy with rice and toppings as desired.

Cooking Tips

Green chile chicken is pretty straightforward to make, but here are a few extra tips to take it to the next level!

  • Different Cuts of Chicken: I used whole chicken breasts, but this recipe will work with 3 pounds of any chicken cut. You can use thighs or breasts and leave them whole or cut them into pieces. Regardless of the cut, be sure to temp the thickest piece with a thermometer to make sure the chicken reaches 365 degrees Fahrenheit.
  • Spice it up! I used mild green chilies, but you can use whichever heat you prefer! You may even add a pinch (or more!) of ground cayenne pepper to the cream cheese mixture to add some extra heat. 
  • Cheese Varieties: I prefer Colby Jack cheese with this recipe but you may use an alternative cheese, if you’d like. Try cheddar, Monterey Jack, or even mozzarella! 
  • Add some fun toppings! Add diced tomatoes, jalapenos, sliced avocado, fresh cilantro, or squeeze a lime over the top.

Make Ahead & Storing Leftovers

This green chile chicken dish is so mouthwatering and amazing, I’m not sure that you will have anything leftover! But if you do, here is how you can store it for later!

  • In the Refrigerator: Store leftovers in the fridge in an airtight container for up to 5 days. 
  • Make Ahead: Prepare this in advance by getting everything ready in the baking dish. Cover with plastic wrap or foil and keep in the refrigerator for up to 48 hours before baking in the oven as directed.
